Coconut oil is around 90 percent saturated fat, making it one of the rare plant-based sources of saturated fat.

What makes it unique as a health food is that it contains medium-chained fatty acids that are smaller, more permeable, and more easily converted into energy.

These fatty acids — lauric acid, capric acid, and caprylic acid — contribute to most of its health benefits.

One tablespoon of coconut oil contains around 120 calories.

There are no, or very minimal amounts, of protein, fiber, vitamins, or minerals.

For instance, there are very small amounts of Vitamin K, Vitamin E, and iron in coconut oil, but not enough to make much of a difference.

However, coconut oil does contain an impressive amount of phenolic compounds, which have antioxidative properties and can fight free radical damage.

Types of Coconut Oil

Coconut oil comes mainly in two types: refined, and unrefined.

Refined coconut oil is made from dried coconut meat and typically does not have a smell or distinct taste.

Not all refined coconut oils may be produced in the same way, so research a particular brand’s refining procedure before you make your purchase.

This is because sometimes the manufacturers might add chemicals to extract more oil and to extend the shelf life.

Unrefined coconut oil, also known as ‘pure’ or ‘virgin’ coconut oil, is made from fresh coconut meat and typically does have a subtle but distinct taste and flavor.

It can withstand higher temperatures but also has fewer nutrients and more of the unhealthy trans-fat.

Virgin coconut oil does not contain any chemicals and will provide all the benefits listed below.
